Rosy Pear Compote
1 16 oz. can whole berry cranberry sauce
1/3 cup sugar
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1/4 teaspoon ginger
6 medium fresh pears, peeled, cored and quartered
2 oranges, peeled & sectioned

In medium saucepan, combine cranberry sauce, sugar, lemon juice, cinnamon and ginger. Bring to a boil. Place quartered pears and orange sections in a 1 1/2 quart casserole. Pour cranberry mixture over. Cover and bake at 350 for 35 minutes or until pears are tender. Spoon into individual dishes. Serve warm. Serves 6.

Apple Oatmeal Crisp
4 cups tart cooking apples, peeled and thinly sliced
1 1/2 tablespoons fresh lemon juice
3 1/2 tablespoons granulated sugar
1/3 cup all-purpose flour
1/2 cup firmly packed brown sugar
1 cup rolled oats
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup melted butter

Preheat oven to 375 degrees. Generously butter a 9" square pan.
Combine apples, lemon juice and granulated sugar and put in pan. In a bowl, combine flour, oats, brown sugar, cinnamon, salt and melted butter and sprinkle over apples. Bake for 35 minutes.

HAM & PINEAPPLE EGG BAKE
1 CAN (8 oz) CRUSHED PINEAPPLE
1 CUP MILK
1 CUP BISQUICK 6 TBSP MELTED BUTTER
4 EGGS
1/2 TSP ONION POWDER
1 TSP DRIED MUSTARD
4 ozs. DICED COOKED HAM
PINCH NUTMEG
1 CUP SHREDDED MONTEREY JACK
OR SHARP CHEDDAR CHEESE
Preheat oven to 350 degrees. Drain pineapple. Combine eggs, milk, Bisquick, butter, mustard, onion powder and nutmeg in blender till smooth. Stir in ham, cheese & pineapple. Pour into greased 9" pie plate. Bake 35-40 minutes or until set. Serves 4-6.

Pumpkin Apple Streussel Cake
2 1/2 cups flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 eggs, lightly beaten
1 cup pumpkin puree
2 cups apple, peeled & chopped
In a large bowl, combine first 5 ingredients: set aside In medium bowl, combine eggs, pumpkin, and oil. Add liquid ingredients to dry; Stir just till moistened. Stir in apples. Spoon into greased 9 x 13 inch pan
Prepare streusel topping by combining 2Tbsp. flour, 1/4 cup sugar and 1/2 tsp. cinnamon. Cut in 4 tsp. butter till crumbly. Sprinkle over batter.
Bake in 350 degree oven for 35 to 40 minutes.

Caramel French Toast
1 cup brown sugar
5 eggs
1 stick butter
1 1/2 cups milk
2 Tbsp corn syrup
1 tsp vanilla
1 loaf day-old French bread
1/2 tsp salt
Cut bread into 3/4 inch slices. Cook butter, brown sugar & corn syrup in saucepan until thick & syrupy. Pour syrup into a 13 x 9 inch non-stick pan. Place bread slices in syrup.
Mix eggs, milk, vanilla, & salt and pour over bread. Cover & refrigerator overnight.
Bake uncovered at 350 for 45 minutes. Invert slices to serve.
